Phoenix Mountain Oolong (凤凰单丛), commonly referred to in English as Phoenix Bird Dancong Oolong, originates from the rugged highlands of Chaozhou in eastern Guangdong. Unlike most tea traditions organized around processing style alone, Dancong tea is defined by its extraordinary focus on individual cultivars—each selected and preserved for its distinctive aromatic expression.
Many of these trees are ancient, and in some cases still propagated through traditional lineages that preserve unique fragrance profiles passed down over generations. The result is a tea tradition where “variety” is not a general category, but a highly specific aromatic identity expressed through each individual tree type.
In this workshop, we will explore the history, cultivation, and processing methods that shape Phoenix Mountain tea, while focusing on how cultivar selection and terroir produce one of the most diverse aromatic landscapes in the tea world. Through guided tastings, you will experience how each varietal expresses itself not just in aroma, but in texture, aftertaste, and energetic structure.
